Orange Cranberry Power Cookies

  • ● 1 cup coconut sugar
  • ● ⅓ cup orange juice
  • ● 2 tsp organic vanilla extract
  • ● 1½ cups whole wheat flour
  • ● 2 tbsp protein powder
  • ● 1 tsp baking powder
  • ● ¼ tsp baking soda
  • ● 1 cup old-fashioned oats
  • ● 1 cup dairy-free chocolate chips
  • ● 1 cup walnuts, chopped
  • ● 1 cup dried cranberries

  • DIRECTIONS
  • Preheat the oven to 375°F.
  • Beat the butter and sugar together in the bowl
  • of a stand mixer. Add the orange juice and
  • vanilla extract. Mix well.
  • Add flour, protein powder, baking powder, and
  • baking soda to a medium bowl. Mix and add to
  • the wet mixture. Mix on medium speed until
  • well blended. Add the oats, chocolate chips,
  • walnuts, and cranberries. Mix on low.
  • Drop heaping tbsp about 2 inches apart on an
  • ungreased baking sheet. These are big
  • cookies. They spread out to 3 to 4 inches in
  • diameter. Bake for 10 to 11 minutes.
  • Cool a minute and then transfer to a wire rack
  • to cool completely.
